Technical information
Description: Base Powder for Sorbetto or water based frozen products with stabilizing and homogenizing properties.
Colour: White in colour.
Appearance: Fine powder.
Taste and Flavour: Neutral taste.
Ingredients: Maltodextrins – non-hydrogenated vegetable fats – dextrose - Dehydrated glucose – vegetable fibre - aromas. Contains: E466 C.M.C. – E410 locust bean gum - E412 guar bean gum - E471 mono and diglycerides – E472 a-b mono and diglycerides esters of fatty acid - E477 mono- and di-esters of fatty acids.
Allergy information: None (GRAS)
Shelf life: 24 months if kept in a dry and cool place and in its original package.
Notice: Do not use wet tools to take out the product from is package. The product must be kept away from light and air.
Use: It can be used for all fruit and all water, soy based, or other than milk frozen products
Features: Stramondo milk base is a powder used in the making of Gelato. This makes the product creamy and fine, increases the volume, keeps the product stable even after a certain period of storage in the freezer, and it makes resistance to liquefaction higher. It eliminates crystallization of ice. It can be use at hot (60C) or cold temperature. Just add 100gr/3oz of base and 220gr/7oz of sugar to 1lt/1Qt of whole milk (3.25%). This gives you a gelato base ready for any type of flavoring you choose.
Instruction for use: 1) mix Gr.100 of SUPERGEL FRUTTA with.220g/300g of sugar in 1 litre of water or other. Optional pasteurization at a temperature no greater than 65°c.
